Just five years ago, Balcones Distillery was founded in an old welding shop under a bridge. Since then, Balcones has released seven handcrafted, small batch spirits which have won 40 national and international awards from the world’s top judges and critics. Their motto is, “We don’t just make whisky in Texas. We make Texas whisky.” Products include Balcones Texas Malt Whisky, True Blue (corn whisky made from roasted Atole, a Hopi blue corn meal), Brimstone (made with all Texas ingredients), Balcones Rumble (made from the finest local wildflower honey, mission figs, turbinado sugar and natural Texas Hill Country spring water), Baby Blue whisky (the first Texas whisky on the market since Prohibition), True Blue 100, and Rumble Cask Reserve. Valley Mills Vineyards

Located just a few miles west of Waco, Valley Mills Vineyards is a boutique winery and tasting room owned by Bill and Amy Peper and John and Kandi Bagnasco. Their vines were planted in 2007, and their tasting room can host private tastings, parties and wine dinners.  Their handcrafted wines include Viognier, Tempranillo Rosé, and Bin No. 1 Red.
